Southern Fried Squirrel.

I shoot quite a few "Grey Squirrels" during the course of a year and to date have never actually eaten one.
In a recent publication, a recipe was included......and it looks quite a tasty way to cook Squirrel.
A few have tried it in the woods being cooked over a campfire with varying success and not really getting the best from the experience.

Here is a recipe for the home kitchen.

Ingredients and methods.

2 Squirrels (jointed)
200ml buttermilk.
200g plain flour.
1 tbsp corn flour.
1 tbsp garlic powder.
1 tbsp paprika.
1 tbsp chili.
1 tbsp salt.
1 tbsp pepper.
1ltr vegetable oil.


Cover the Squirrel joints in buttermilk, cover, and place in the fridge overnight (8+ hours)

Add the flour, corn flour, garlic powder, paprika, chili, salt, and pepper to a large bowl and mix well.

Remove the Squirrel from the fridge and allow to reach room temperature.

Heat the vegetable oil to just before boiling point.

Take the Squirrel pieces out of the buttermilk and cover each one completely in the flour mix before placing on a wire rack.
Cook the Squirrel in the oil in batches for around 5 minutes, allowing the meat to cool for at least 5 minutes.

Goes exceedingly well with some homemade chips and coleslaw.

Morning my good man :D yeah the glands lol exactly what I didn’t remove when I tried it......

You could also use the fur as well as eating it. Would make a cracking hat in the right hands buddy.....a lot of work right enough....but worth a go at least once mate.

To be absolutely honest with you......its too much faffing around for me :D
The fur is lovely stuff and would make a great pair of mittens or a hat maybe..........but again a lot of faffing around.
But............... power to the elbow of anyone who wants to give it a go :xmas-cool:

Do you think, that rats (Rattus Norwegicus) taste good too, if they are treated in that way?

We have a lot of them in our garden colonie.

I mean, squirrels and rats are more or less the same, isn't it?

I know it's not squirrel but we were fortunate enough to have two pheasant this week. Got two good meals.

I imagine I'd cook it in the same way as rabbit , be great in a stew with baby onions , a sweet gravy would enhance things , if I come across a couple of squirrel I'll give it a go ........

or maybe Tuscan squirrel ......
