Rabbit in olive oil
I found this recipe in a gun mag
Rabbit should be skinned and gutted and soaked in salt water or milk overnight
Ingredients
Rabbit
Olive oil
Salt and pepper
Method
Remove rabbit from the water or milk rinse in clean water
Place it in a large pan cover with water and bring to the boil
Simmer for 2 to 3 hrs or until the meat starts to flake of the bone
Drain and let the rabbit cool, remove all the meat and place into a Tupperware container,
Add a good pinch of sea salt and cover with olive oil, place in refrigerator this should keep for up to 2 weeks.
