It has a surprisingly long and deep embedded tap root tuber which is where the majority of the carbs reside. If one intends to procure make sure you are armed with a decent fire hardened digging stick.

"Fire Hardened digging stick"????? I use a good Steel spade mate, been around for hundreds of years:)
 
Just out of curiosity: Burdock would be Arctium lappa, right?
Haven't tried these so far to be honest.
