Cajun Rabbit

Cajun Rabbit


  • 1 young rabbit 2/3years
  • Onions cut into chunks
  • Bell peppers in chunks
  • Celery in chunks
  • Garlic
  • Bacon


Prepare the rabbit as normal and rub genorous amounts of black pepper and salt all over the rabbit, insides aswell and fill the cavity with the chunky vegetables

Wrap the bacon around and secure it with toothpicks or skewers

Place in a baking tray with a little oil and 1/4 cup of water and cover and place into the preheated (250 degree) oven for 2-3 hours

Remove the cover for the last 30mins
