Christmas Pheasant

Ok, I'm not a big fan of Turkey and add that to the fact there is only two of us, here is my Christmas Pheasant.

Ingredients:

Stuffing:

  • 3 Good pork sausages
  • 1 handful of walnuts
  • Breadcrumbs - l large white loaf crust
  • Thyme
  • Chives
  • Parsley
  • 1 Clove of garlic
  • 1 egg yolk
  • Half a red onion

Mositure and flavour:
  • Thyme
  • Parsely
  • Butter

Method:

Mix all the ingredients for the stuffing. Mix all herbs with butter obviusly separately.

Now lay three strips of streaky bacon (smoked or unsmoked, your choice) across the phesant. I like smoked bacon for the flavour.Stuff the phesant and use a very samll amount of the herb butter. I do mean small 'cos your going to get a lot of fat off the bacon.

Black pepper across the bacon to finish off.
