Seared Tuna With Tangy Cucumber Salad

Ingredients:

  • 2 fillets of fresh tuna
  • Noodles
  • Beansprouts
  • Red Thai Curry Paste
  • Coconut Milk
  • Half a cucumber
  • Teaspoon of fresh ginger
  • Teaspoon of fresh red chilli
  • Juice of half a lime
  • Tablespoon of honey
  • 3 tablespoon of soy sauce.
  • 2 chopped spring onions

Method:

Stir fry the beansprouts in a little red thai curry paste then add a small dash of coconut milk (I buy the blocks as it goes further and lasts longer as it isn't the sort of thing you use everyday.

This went on top of the noodles, pan sear the Tuna and then on top of with the beansprouts.

The cucumber salad - half a cumber, skin removed and sliced very thin

Place the salad on top of the tuna (and remainder left in bowl on table) and drizzle with some of the salad juice.
