Birch Tapping.

Well....time is moving on and we will soon be into Spring......thank goodness :)
Tapping a Birch and collecting its sap is on my to do list....never tried it before......and never tasted the sap.
Middle to end of March seems to be the best time....when small buds are showing on the tree.

Anyone here tried it?....what do you think of it?........supposedly full of vitamins :)


 
It's very nutritious Bill and not overly sharp in flavor. Ideally you need a scotch auger to bore a hole about 3 inches deep with about a 15/20 degree downward bias. Whittle some pegs about the same diameter as the auger hole and about 4 inches long and carve a notch the length of the peg and another notch crossways about half inch from the end, this is to hang your pot from. Keeping the notches uppermost hammer the peg into the hole making sure the hanging notch is outward. Hang the pot, cover the pot with a bit of muslin then sit back and wait
