Cajun Rabbit - Cajun Rabbit Recipe

Ingredients:

  • 1 young rabbit 2/3years
  • Onions cut into chunks
  • Bell peppers in chunks
  • Celery in chunks
  • Garlic
  • Bacon

Method:

Prepare the rabbit as normal and rub genorous amounts of black pepper and salt all over the rabbit, insides aswell and fill the cavity with the chunky vegetables

Wrap the bacon around and secure it with toothpicks or skewers

I'll have a bash,shoot your bunny,paunch it,skin it,cut the bugger in two,chuck it in the oven for a bit,pull meat off the bone & feed to the dog,HAVE IT!:cool:

i like to

debone bunny and cut into small cubes
marinade in verry dry cherry soy sauce and meat marinade for 1 -3 days in fridge
when ready to cook make a batter, wichever way suits you i use
1 tbs of beaten egg + water to make half cup / half a small jug
1/4 cornstarch
1tbs of oil, i use corn oil
combine in mixing bowl and beat untill smooth paste

in a wok / stir fry pan heat 2" of oil to 375 - 400

dip rabbit into your batter and fry in wok till goldon brown , trasfer to oven to keep warm no more than 10 mins though :)


I then add some carrots patato what ever you want with it and eat :D
 
My missuses recipe for rabbit casserole,
1 prepared rabbit in a casserole dish,
1 large onion diced finely,
Potatoes & carrots diced,
brush the rabbit with a good helping of honey
1 litre of red wine poured over & put in
the oven for 90 minutes at 180 c.
Well I had it, the rabbit was awful,
but the gravy was out of this world.;);)
