Elderflowers fritters in mahonia syrup.

First raid mates garden for a good handful of mahonia fruit.

Wash fruit add same by volume in sugar. Heat until sugar disovles and fruit softens. cool over night, mash fruit of seeds and removes seeds with jambag/net curtains/pair of socks. Store.

Pick two big elder flowers per person. Shake spiders off unless think they are tasty

Make basic batter. 1 egg and enough self raising flour and milk to be thick and well mixed.

Heat oil in pan

cover flowerheads in batter and deep fry until batter is cooked. Leave the stalk up wards

cover plate in syrup , and place flower heads stalk up on plate. Eat by holding stalk and dripping syrup down chin. Dont eat the stalk.
 
Sounds good that Fi. Elderflowers have a lovely taste. :)

Not got a clue about Mahonia though lol gonna have to google that one.

That is what mahonia looks like when in flower. It is also called oregan grape, it is common garden plant. The leaves are almost holly like the fruit is purple. There is quite a few cultivars or various sizes. The seeds are pretty bitter, so are generally processed out of dishes.
