Herb Roasted Rabbit And Potatoes - Herb Roasted Rabbit And Potatoes Recipe

Here's one of my favourites which will serve approximately 6 people:

Ingredients:

• 4lb Rabbit (cut into 8 pieces, rinsed & patted dry)
• 8md Red potatoes (quartered)
• 24lg Cloves garlic
• 6tb Olive oil
• 4oz Slab bacon (rind removed & cut into 1" cubes)
• 6tb Fresh rosemary leaves OR
• 2tb Dried rosemary
• 2ts Coarsely ground black pepper
• Coarse salt, to taste (optional)
• 6 Sprigs rosemary, for garnish
