I believe that generally, hand size and arm length ratio can be taken as relatively standard which is why you can estimate the number of degrees of sky with individual fingers or splayed at arms length.

The same goes for the distance between your eyes versus your eye to extended arm being approx. 1:10 which allows you to estimate distance.
