Wild Garlic (Ransoms) young tops before flower opens nice pickled, stems treat like leeks
Dandelion roots can be eaten as well
Rose hips flowers can be eaten also make wine in fact has a load of uses same as stinging nettles really

Yep and the list goes on, acorns roasted then ground into a version of coffee
 
Another nice one to look out for is 3 cornered leek, the plant looks very similar to a white bluebell (NOT TO BE CONFUSED) but the stem is triangular hence the name 3 corner leek
