I had a phone call from my mate today asking did I fancy have any pheasants as they had some spare that would be going to waste. My response of course was yes I'll have a couple.
Well he turned up an hour later with 10 pheasants. 6 shot on Friday and 4 shot yesterday.
We prepared them all and decided to keep the fresher ones separate from the slightly older ones to do a taste test.
We decided to try a pheasant burger recipe which was in one of my favourite cook books ( Hunter gather cook)
We cooked the fresher one first which where bloody lovely with subtle game flavour. Then we cooked the older one which definitely had more flavour but yummy all the same.
On conclusion this recipe was a true winner and the age of the bird doesn't make a huge difference.
