Ingredients:

• 4 pigeon breasts
• salt
• freshly ground black pepper
• 3 tsp vegetable oil
• 3 tbsp unsalted butter
• 2 baking potatoes, boiled for 8-10 minutes in their skins, drained
• 2 tbsp chopped fresh thyme
• 1 tbsp fresh cranberries, blanched
• 50g/1¾ oz butter
• 200g/7oz horse, chestnut or shiitake mushrooms, cut in half
• 200ml/7fl oz ready-made light gravy
• ½ lemon, juice only
